Mint chocolate chip ice cream is my daughter’s favorite so naturally I decided to try and make it myself. This is my version of vegan mint chocolate chip ice cream. It’s a lot easier than I thought it would be and it’s a perfect summer ice cream.
Fresh mint is abundant this time of year and I’d highly recommend that over mint flavoring.
What I love about this recipe is that it’s quick, easy, and just as delicious as store bought. Maybe even more delicious than store bought. It’s also way less expensive.
All you need are frozen bananas, fresh mint leaves, coconut milk, maple syrup, vanilla, and chocolate chips.
You might never buy it from the store ever again!
Vegan Mint Chocolate Chip Ice Cream
Serves 2
Ingredients~
2 large bananas, frozen and broken in half
1/3cup – 2/3 cup coconut milk (depends how thick you want your ice cream)
1 Tbs maple syrup
1 tsp vanilla
10 fresh mint leaves
2 handfuls of vegan chocolate chips
Directions~
Assemble your ingredients except the chocolate chips in a high speed blender or food processor. Mix thoroughly until the bananas are creamed and no longer chunky.
Divide into 2 bowls and sprinkle a handful of chocolate chips in each bowl.
