Smoothie ingredients are seasonal for me. In winter, I like pears and ginger in my smoothie and in late spring, I love mangos and mint. This Mango Mint Green Smoothie is a powerhouse of flavor, with a sneaky ingredient or 2. It’s my absolute favorite this time of year and can be modified very to suit your tastes.
Mango Mint Green Smoothie:
Makes about 2 cups worth, but serves one in my opinion.
Ingredients
1 large mango, peeled and pitted
1 small banana, peeled
1 large carrot, peeled
1/2 avocado
small handful of mint leaves (no stem)
large handful of kale or other dark leafy greens (about 2 cups)
2 Tbs lime juice
1 cup nut milk or coconut water
**optional: 1 peach, peeled and pitted
Directions
Combine all of the ingredients in a high speed blender. My advice is carrot and banana toward the bottom and everything else on top.
Add more liquid as needed or ice if you don’t like your smoothie room temperature.
Enjoy this deliciousness immediately and in seclusion, as everyone nearby will want a taste and will then want to steal it.
