I know I recently shared a “nice cream” recipe and here I am, a few weeks later, sharing another one. Why? Because it’s summer and because I can and because they’re really different from one another.

Best of all, it only has 5 ingredients, so it’s super easy AND super delicious.

As summer starts to wind down and turn the corner towards autumn, you might be looking for something a little less sweet and fruity. Something a little more adult. Something the kids might not like quite as much and steal from your bowl.
This is that dessert.

5-Ingredient Vegan Mint Chocolate Ice Cream
Serves 2 (or really, just 1. Why share?)
Ingredients~
2 large frozen bananas (3 if you really do plan on sharing more than a few bites)
1/2 cup coconut milk
2 Tbs raw cacao powder (increase or decrease for a more or less chocolatey taste)
1 Tbs maple syrup (raw honey works, too, in a pinch)
1 sprig of mint (tear off the leaves. stem does not go in)
optional: 1 tsp vanilla
Directions~
Add all of the ingredients into a high speed blender or food processor. Blend until thoroughly mixed and ice-cream-like.
If you want it less soft, refreeze. You also have to possess excellent self-control and delayed gratification capacity.
Otherwise eat it up before it all melts!
