2-Ingredient Dessert Snack: Dates and Peanut Butter

You know those times when you want something that is both a dessert and also a snack? Ideally, this is something quick and easy to make, as well as satisfying and delicious.

I have just solved your dessert snack problems forever.

Introducing the 2-Ingredient Dessert Snack:

Combine peanut butter with a pitted date and you’re in dessert snack heaven.

If you have a little more time or are a very patient person, you can get an extra flavor infusion by putting these babies in the freezer.

Hooray for delayed gratification!

They won’t win awards for appearance, but these 2-ingredient tasty treats are so delicious it doesn’t matter.

If you don’t like peanut butter or have a PB allergy, you can use any nut butter here and it will still taste delicious. I personally use homemade nut butter, a combo of peanuts and cashews. Anything will be delicious.

In terms of assembly, I remove the pit without completely separating the 2 halves of the date.

Then, I take a small spoonful of peanut butter and try to fill the empty space left by the pit in both halves.

After the halves are filled to the max, I press the whole thing shut. Some peanut butter inevitably squeezes out. No problem. You can either wipe it off or you can leave it on for a little extra nut-buttery-goodness (this is what I do).

Usually I try to make a big batch all at once. I eat 2 at room temp, then place the remaining dates in the freezer.
