Strawberry Mango Popsicles

Who loves popsicles? I just made these Strawberry Mango popsicles, thanks to a trip to a local strawberry farm, and if you don’t like popsicles, these will change your mind.

My kids think popsicles are the best and I tend to agree. I just prefer to make them with fresh fruits at home so I can avoid all of that unnecessary plastic wrapping that comes with them when we buy them from the store.

These popsicles are super simple and I added a little sneaky twist, too.

You can make these popsicles one of 2 ways: with coconut milk or without. I happen to be a fan of coconut milk, so I like them with. My daughter prefers them sans-coconut. My son will eat them happily no matter what.

You need 4 ingredients for these popsicles. Just 4. Doesn’t get much simpler than that, right?

Strawberry Mango Popsicles

Makes 6

Ingredients~

2 cups Fresh Strawberries, tops removed

1 mango, peeled and pitted

1 Tbs agave syrup or maple syrup

optional: 1 /2 cup coconut milk or water

Directions~

Combine all ingredients in your blender. Mix well, until smooth. Add more liquid or ice (or strawberries!) if it’s not smooth enough.

Pour even amounts into each popsicle holder. If there’s any leftover, go to town and have a sweet, un-frozen popsicle treat.

Place in the freezer overnight. Popsicles take at least 8hrs to set.

Try not to eat them all in one sitting.
